Ingredients:
- Thill – ½ cup
- Guddu – 1 cup
- Wheat flour – 2 cups (make into a dough as we make for chapathis)
Method:
- Dry roast thill in a pan till they change their color slightly.
- Blend thill and guddu together into a fine powder. (as shown)
- Roll the small amount of atta into puri size and place 1 to ½ sp of thill guddu mixture in the middle of that puri and fold it. (as shown)
- Press it lightly and again roll it into a paratha with the help of dry flour as shown.
- Fry the paratha on a hot tava, both the sides with ghee.
- Serve it hot. Healthy and a tasty dish is ready. And I can say that kids will simply love it.
Ingredients:
- Pudina – 1 cup
- Fresh coriander leaves – ½ cup
- Green chilli – 3 to 4
- Salt to taste
- Onion – 2 (chopped)
- Tomato – 1 (chopped)
- Eggs - 4 to 5 (boiled and cut in to 2 pieces)
- Butter/ ghee – as required for frying pav
- Pav – 10 to 12 pieces
- Lettuce leaves (optional)
Method:
- In a mixer blend pudina leaves, coriander leaves, green chilli and salt to taste. (as shown)
- Heat the tawa and fry the pav both the sides with ½ sp of butter.
- In the inner side of pav spread 1 sp pudina paste and place the egg on 1 side.
- On the other side place 1 sp of onion and ½ sp of tomatoes.
- Fry both the sides and place lettuce leaf and close. Serve it hot.
Ingredients:
- Green chilli – 1/4 kg
- Besan flour – 1cup
- Rice four/corn flour – 1/4 cup
- Cooking soda – 2pinchs
- Dry coconut powder – 3tbsps
- Thill – 1sp (roasted)
- Groundnut – 2sps (roasted)
- Jeera – 1sp (roasted)
- Tamarind – as shown
- Turmeric powder – 1sp
- Red chilli powder – 1sp
- Salt to taste
- Cooking oil – for deep fry
Method:
- Blend coconut powder, thill, groundnut, jeera together. Add tamarind and salt and blend. (as shown)
- Slit the green chillis as shown and fill the chillies with the above masala.
- In a bowl mix besan, rice flour, cooking soda, red chilli powder, turmeric powder and salt. (if req. add fresh coriander leaves)
- Dip the stuffed green chilli in the besan batter.
- And deep fry them as shown.
- Fry till golden brown and serve hot with onions.
Ingredients:
- Rice - 3 glasses
- Uditdal - ½ glass
- Groundnut - ¼ glass
- Putanadal - ¼ glass
- Grind the above ingredients to powder
- Ajwin - 2sps
- Thill - 2sps
- Red chilli powder - 2 sps
- White butter - ¼ kg
- Salt as per ur taste
Method:
- Mix the above powder, ajwin, thill, red chilli powder, white butter and salt together with required water to make a dough. (as shown)
- Place the dough in the muruku/chakli . And press on a plate or a wet cloth. (as shown)
- Heat the oil for deep fry in a deep pan. Fry these chakli in medium flame till they are golden brown. (as shown)
- Crispy Muruku is ready to serve.
Ingredients:
- Red pumpkin - 1 cup (grated)
- Wheat flour - ¾ cup
- Jawari flour - ¼ cup
- Ragi flour - ¼ cup
- Redchilli powder - 2 sps
- Turmeric powder - 1 sp
- Daniya powder - 1 sp
- Fresh coriander leaves
- Salt to taste
- Cooking oil - for deep frying
Method:
- In a bowl add all the flours together. Then add grated pumpkin, red chilli powder, turmeric powder, daniya powder, chopped coriander and salt to taste.
- Knead as puri dough with enough water.
- Make small balls and press them to the shape of puri as shown.
- Deep fry them in cooking oil as shown.
- U can even roll them like roti and fry both the side on tawa. (if u r calorie conscious)
- A very healthy and tasty home made puri is ready. Especially for PURI FANS.
Ingredients:
- Udit dal - 2 cups
- Rice - ½ cup
- Green chilli - 3
- Ginger - 2 sps (pieces)
- Onion - 3 to 4 (chopped)
- Karipatha - 2 sps (chopped)
- Fresh coriander leaves - 5 to 6 sps (chopped)
- Pudina - 3 to 4 sps (chopped)
- Cooking oil - as req. for deep frying.
- Soak the udit dal and rice together in water for 3 to 4 hrs.
- Blend udit dal, rice, green chilli, ginger and salt (as per ur taste) all together without adding water. (as shown)
- Add onions, coriander, karipatha and pudina into the above paste.
- Mix all together. By dipping ur hand in water make vada on ur hand. (as shown)
- Or else take a wet cloth/milk cover to tap the vada.
- Deep fry them in oil till golden brown.
Ingredients:
- Paneer - 1 cup (grated)
- Bread pack - 1
- Pudina - ¼ cup
- Coriander - little more than ¼ cup
- Green chilli - 2 or 3
- Garlic flakes - 5 to 6
- Salt to taste
Method:
- Blend the above ingredients (except paneer and bread) to paste as show.
- Mix the above blended paste with the grated paneer. (as shown)
- Take a bread slice and spread the paneer mixture on it.
- Apply butter on both the sides and toast it in a sandwich toaster or on tawa.
- Simple and tasty coriander paneer sandwich is ready to serve.
Ingredients:
- Slightly over cooked rice/ left over cooked rice - 2 cup
- Oats - 1 ½ cup
- Grated carrot - ½ cup
- Green peas - ¼ cup (boiled and slightly mashed)
- Pudina, coriander and green chilli paste - ½ cup
- Paneer - ¼ cup (grated)
- Salt to taste
- Cooking oil as req. for shallow frying
Method:
- In a blow, mix all of the above ingredients except cooking oil. (If req. add 2 to 3 sps of warm water as shown)
- Take small amount of mixture in hand and give the shape of cutlets (as shown) or ur req. shape.
- In a flat pan/tawa, heat 1 to 2 sps of cooking oil and place the cutlets in it.
- Fry form both the sides (as shown).
- Healthy homemade cutlets are ready to serve :)
Ingredients:
- Groundnut - 4 tbsps (crushed)
- Tamarind paste - 3 tbsps (soak in water and blend it)
- Turmeric powder - ¼ sp
- Daniya powder - ½ sp
- Jeera powder - ¼ sp
- Salt as per ur taste
Method:
- Mix all the above items (as shown) to prepare the masala paste.
- Wash the green chillies and slit them open. Remove all the seeds from it (this will reduce the spicyness of the mirchi)
- Stuff the above masala in the mirchi (as shown)
- In a bowl take 2 cups of chanadal flour, less than 1 cup of rice flour, cooking soda - 2 pinchs, red chilli powder - ½ sp, turmeric powder - ¼ sp, salt as per ur taste. Mix it well with water (as shown).
- Now dip one by one the stuffed mirchi in the batter and deep fry them in the oil (as shown).
- Serve with sliced onions and enjoy it hot:)
