Mix Vegetable Curry

Ingredients:
  1. Onions-2
  2. Karipatha leaves-10
  3. Turmeric powder- ½ sp
  4. White radish-1
  5. Potatoes-3
  6. Tomatoes-2
  7. Green peas-1cup
  8. Fresh coconut at about 3inches
  9. Kuskus -1sp
  10. Thill-1sp
  11. Badam-5 to 6
  12. Cooking oil-2tbsps
  13. Fresh Coriander
  14. Ginger & garlic paste -1 sp
  15. Red chilli powder-2sps
  16. Salt  as per ur taste
  17. Garammasala- ½ sp
  18. Water-3glasses or more
  19. Coriander powder-2sps
  20. If u wish u can add more veggies like –cauliflower, French beans, capsicum , carrot  & also soya.

Method:
  1. For gravy :  In a mixer blend kuskus,  thill & badam to powder first,  then add coconut pieces add little water and make a fine paste.
  2. Peel off radish, cut in to pieces (take  ½ sp of oil in a pan roast them a bit as shown in the picture.)
  3. Peel potatoes & cut them into big cubes. Cut onion as shown.
  4. Take pressure cooker, pour oil, add onions pieces, karipatha leaves & turmeric powder. Fry till the onions are cooked.  Add ginger garlic paste, fry for a 1min and add potato , radish ,green peas fry for 2 mins.  Add coconut paste. Now let it fry till the oil is separated. Make sure that u keep on mixing the ingredients.
  5. Add red chilli powder  & coriander powder,  fry it for ½ a min.  Add water, salt & now pressure cook it for 10mins. (water u can add as per ur wish)
  6. Remove the lid transfer it to a blow & garnish it with coriander leaves.
  7. Great combination with naan, roti, puri & pulav.

Burnt Garlic Rice


Ingredients:
  1. Onions- 2 (sliced)
  2. Garlic flakes-10 (grated)
  3. Rice-1cup
  4. Jeera- ½ sp
  5. Sajeera- ½sp
  6. Cooking oil -1tbsp
  7. Fresh coriander leaves
  8. Salt to taste


 Method:
  1. In a pan pour oil, as the oil gets heated, add jeera and sajeera. Fry for ½ a min.
  2. Add sliced onions & grated garlic, fry till they r light brown.
  3. Meanwhile cook ur rice with adding a little salt to it.
  4. Finally mix the rice in the pan with the onions & garnish with chopped fresh coriander leaves.

Mushroom Mutter Paneer


Ingredients:
  1. kus-kus – 1 spoon
  2. Thill - 1 spoon
  3. Badam - 4to 5
  4. Tomatoes-4
  5. Onion-1 (chopped)
  6. Karipatha leaves
  7. Mushroom-6 to 7
  8. Paneer- ¼ kg(cut into cubes)
  9. Mutter (green peas)
  10. Red chilli powder-3sps
  11. Daniya powder-1sp
  12. Turmeric powder- ½ sp
  13. Garam masala- ½ sp
  14. Carrot-2(chopped)
  15. Cooking oil-3tbsps
  16. Salt as per taste


Method:
  1. Blend kuskus, thill & badam in to powder. In the same jar add 4 tomatoes (cut into big cubes) and make a paste.
  2. Now pour some oil in a pan and add chopped onion & karipatha. Let the onions cook for 3 to 4 mins.
  3. Now add the above blended mixture to the onions, fry this till the oil separates. Now add carrot, mutter , mushroom and fry it for 2 to 3 mins…..now add all the masala like red chilly powder, daniya powder,  jeera powder,  garam masala powder & fry it for another 1mins (not more than 1 min or else ur masala will be burnt)
  4. Add 2 glasses to water and salt as per ur taste. Bring it to boil, then finally add the king (main item) to the dish i.e.  paneer cubes.
  5. Let it boil for 10mins and garnish with coriander leaves. 
 

Wheat Flour Onion Pakoda


Ingredients:
  1. Wheat flour -1cup
  2. Rice flour - ½ cup
  3. Onion -2 {chopped }
  4. Red chilli powder -  ½ sp
  5. Turmeric powder - ¼ sp
  6. Cooking soda - a pinch
  7. Fresh Coriander leaves chopped - 3sps
  8. Salt as per ur taste
  9. Cooking oil for deep frying.

 Method:
  1.  In a blow take wheat flour and rice flour. Add salt as per ur taste, red chilli powder,  turmeric powder, cooking soda, chopped onion and coriander.  Mix all together as shown in the picture.
  2. Heat the oil in a deep frying pan. Fry the pakodas as shown the picture.
